  • Location: Nierstein, Rheinhessen, Germany
  • Variety: Riesling, Silvaner, Müller-Thurgau, Pinot Blanc, Scheurebe, Ehrenfelser
  • Viticulture: Certified organic, biodynamic practices, regenerative. High-density plantations, up to 12,000 vines per hectare. Minimal or no tilling. Natural ground cover is grazed by sheep or mowed. Minimal or no trimming of the canopies to increase vine shading and minimize water evaporation. When not trimmed, the shoots are loosely braided across the rows to form a pergola.
  • Vinification: Grapes are foot-crushed and pressed for 12 hours or more. Ambient yeast fermentation. Laissez-faire malolactic conversion, blocked in the Kabinett wines. Aged for 10-35 months in used barrels, some under flor. No fining, only the Kabinett wines are lightly filtered. No added SO2 in the dry white wines since 2018.
